When you’re craving something sweet and chocolatey, these easy four ingredient truffles will do the trick, with the added bonus of nutritious whole foods like quinoa, almonds, dates, and cacao.

Ingredients
- 1 cup cooked organic quinoa, cooled
- 1/2 cup raw almonds
- 3/4 cup pitted dates
- 2 tsp. organic raw cacao powder
Instructions
- In a food processor, blend quinoa, almonds, and dates pulsing about 4 seconds at a time until mixture is well-blended. Place cacao powder in a small bowl or plate.
- With wet hands, scoop the quinoa mixture to make 1” balls. Roll the truffles in the cacao to coat completely. Enjoy!

Carob powder, also called carob flour, is a cocoa powder alternative. It’s made from dried, roasted carob tree pods. Carob powder is often used as a natural sweetener in baked goods. It’s sweet and has a unique taste. Both Cacao and Carob have good nutritional profiles and taste somewhat similar. Like all edible plants, Carob is safe and healthy to consume. :)
