When you’re craving something sweet and chocolatey, these easy four ingredient truffles will do the trick, with the added bonus of nutritious whole foods like quinoa, almonds, dates, and cacao.


Quinoa Truffles


  • 1 cup cooked organic quinoa, cooled
  • 1/2 cup raw almonds
  • 3/4 cup pitted dates
  • 2 tsp. organic raw cacao powder


  1. In a food processor, blend quinoa, almonds, and dates pulsing about 4 seconds at a time until mixture is well-blended. Place cacao powder in a small bowl or plate.
  2. With wet hands, scoop the quinoa mixture to make 1” balls. Roll the truffles in the cacao to coat completely. Enjoy!


Cookies may last a week refrigerated in a sealed container.
