Mom’s Naked Coconut Brown Rice
If you like rice, this recipe is a must. It’s full of fiber, vitamins, essential fatty acids, and the anti-viral, anti-bacterial, and anti-microbial benefits of coconut. Completely dreamy!

Makes 2 – 3 servings.
INGREDIENTS
1 cup brown rice
3 cups vanilla rice milk*
1 cinnamon stick
1 cup unsweetened coconut
¼ cup of red onion, chopped
¼ tsp. organic pure vanilla
¼ tsp. pink Himalayan salt
*Almond vanilla milk, vanilla flax milk may be substituted.
COOKING INSTRUCTIONS
In medium saucepan, sauté chopped red onion in 3 teaspoons of water. Mix brown rice in the pan and cook for 2 minutes. Add milk, coconut, vanilla, pink salt, and cinnamon stick, bring to a boil. Reduce to medium heat and cover saucepan. Cook for 20 minutes. When liquid evaporates, add 1 cup of water, and continue cooking for another 25 minutes.

Is the brown rice cooked, or do you cook it in the recipe? I am guessing it is uncooked, but I wanted to double-check. Thanks!
