Ingredients

  • 1 pound (about 2 large) yellow potatoes, peeled and grated (2 cups)
  • 1 small onion, grated (½ cup)
  • 1 pinch oregano powder
  • 1 Tbsp. Juice of a lemon
  • ½ cup whole breadcrumbs
  • 1 tsp. baking powder
  • 2 Tbsp. fresh chives, finely chopped (optional)
  • 1/8 cup Naked sour cream or vegan sour cream
  • 1 tsp. white miso
  • Pinch freshly ground black pepper

For Topping

  • ½ cup apple jam or apple sauce
  • 1 cup Naked sour cream or vegan sour cream
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Squeeze out any liquid from the potatoes with a clean kitchen towel.
  3. Transfer potatoes, garlic, oregano, and onion to a bowl. Add lemon juice, breadcrumbs, baking powder, chives, parsley, sour cream, and pepper. Combine well.
  4. Form ⅓-cup patties and place on prepared baking sheet. Bake for 25 minutes, until lightly browned. Remove baking sheet from oven and flip the patties over. Increase the oven temperature to 425°F, and bake patties 10 more minutes, or until the tops are lightly browned.  Top the patties with Naked sour cream and apple sauce or jam. Enjoy!
