For a quick and healthy Halloween treat, make these cute mummy truffles! Since no baking is involved, they come together quickly and are ready to eat in no time!

Ingredients

For the truffles:

2 Tbsp. organic raw cacao

1/2 cup organic raw zucchini

1/2 cup rolled oats

¼ cup medjool dates or raisins

For the cream:

½ cup cashews

½ tsp. alcohol-free vanilla extract

2 medjool dates, pitted

For decorating:

1 Tbsp. filtered water

½ tsp. organic raw cacao

Instructions

Place all the truffle ingredients in a food processor and pulse for about 20 seconds until all well-blended.  With wet hands, scoop small teaspoons of mixture and form round balls.  Set aside.

In a food processor blend the cream ingredients until very smooth and velvety.  Spread the cream over the “faces” of six of the truffles and set aside.  For the other six dark truffles, add two small pea size quantities of cream for the mummies’ eyeballs.

In small bowl mix 1 Tbsp. water and ½ tsp. raw cacao.  Using a toothpick, place small drops of the cacao mixture to make the eyes, noses, and mouths on all of the truffles.  Serve and enjoy!
