More than just an efficient way to quickly cook dry beans or throw together a pot of chili, multi-function cookers like the Instant Pot® can also steam vegetables, make quick mashed potatoes, and even make jam or yogurt. Britt Brandon is a certified personal trainer and certified fitness nutrition specialist who also has her own fitness and nutrition blog. She really uses the Instant Pot® to its full potential in this book.

 

WHAT IS AUTHENTIC:  

“I Love My Instant Pot®…” is a well laid-out cookbook. The instructions are easy to follow, and although there aren’t many photographs, the photos that are included are colorful and well-presented.

 

WHAT IS KIND:

In addition to the recipes, Brandon includes a preface describing all the many functions and buttons on the standard Instant Pot®, so even beginners who get their first pressure cooker as a holiday gift can get acclimated right away to all this gadget can do.

 

WHAT IS ENLIGHTENED:

There is a wide variety of recipes in this book; dishes that you wouldn’t expect to come from a pressure cooker. Breakfast isn’t just oatmeal, but Spinach and Portobello Benedict (complete with vegan Hollandaise!) Dinner isn’t just rice but risotto—FIVE different risotto recipes are featured. And there is a plethora of recipes for sauces, jams, and even chutneys.

 

IS THIS BOOK FOR YOU?

If you think you can’t adapt to a vegan diet because it’s too time-consuming and complicated—it isn’t, but if you THINK it is—and you want to get more versatility out of your pressure cooker, this book is for you.
